Movement of Racks

The movement of racks within the bakery is a fundamental part of the process. Racks, when moved incorrectly, can cause injury. All operatives must be aware that racks are always moving in the bakeries and take care when moving about through them.

You may only move 1 rack at a time, whether full or empty. You must never allow racks to “free-wheel”, or push them and let them go.
